Pita Pockets

4 2/3 C flour
1 1/2 tsp. sugar
1 3/4 Tbs. Warm Water (or is it 1 3/4 C ?? -Jared)
1 Tbs. Yeast
1 1/2 tsp. Salt
2 Tbs. Oil

Mix all ingredients together and knead a few minutes, then let it rise (for how long?  -Jared)

Pinch off the size of a golf ball and dust with flour, roll out 4-5''

Bake 2-3 minutes at 480 degrees

Place on rack and bake 2-3 more minutes.

Pitas can then be stuffed with whatever you like.  We like to stuff them with fresh spinach and cheese and then nuke it for 30 seconds.  Another favorite is stuff it like a calzone or just to use the ones that don't rise as well and make a mini pizza.

*This recipe makes about 24 small pitas, each person will usually eat about two.
