Pancakes from a Boxed Muffin Mix

So we were out of flour, sugar and had 2 eggs left and the kids wanted pancakes. We had one box of muffin mix so I Googled 'boxed muffin mix into pancakes' and got this recipe. It was really good and the kids loved it.


Things You'll Need

  • One 6.5-ounce pouch Betty Crocker muffin mix (look and see how many ounces your mix is and adjust the recipe accordingly)
  • 1 tablespoon all-purpose flour
  • 2/3 cup water (use all the water, our pancakes we a bit to muffin thick, but still yummy)
  • 2 tablespoons vegetable oil
  • 1 egg
  • Bowl
  • Spoon
  • Skillet
  • Spatula

      Combine all five ingredients in the mixing bowl and stir until blended.

      Heat an electric griddle to 300 degrees.

      Grease the grill if the surface is not nonstick.

      Pour about one-half of a cupf of batter onto the hot griddle.

      Cook for approximately three minutes on each side. You'll know when it is time to turn the 
      pancake when the batter on the uncooked upper side begins to develop bubbles. Only turn once.
