Strawberry Cupcakes with Strawberry Frosting


Strawberry Cupcakes with Strawberry Frosting  (Makes 12 cupcakes)

This is what we made for Nick's birthday.  Sooooo yummy!


Cupcake Ingredients
1 C white sugar
½ C butter
2 eggs
2 t vanilla extract
1 ½ C all purpose flour
1 ¾ t baking powder
½ C milk
1 small package frozen strawberries thawed and chopped, or you can use fresh

Frosting Ingredients
3 T fresh strawberries pureed
1 C unsalted butter
3 ½ C powdered sugar
½ t vanilla extract
A dash of salt

Cupcake Directions
Preheat oven to 350 degrees.  Cream together the sugar and butter.  Beat in eggs one at a time then stir in vanilla. Combine flour and baking powder.  Add the combined flour and baking powder to the creamed mixture and mix well.  Stir in milk until batter is smooth.  Finally, mix in thawed chopped strawberries.  Fill muffin cups ¾ full.  Bake for 20 minutes.  Cool cupcakes in pan.  Cupcakes must be completely cooled before topping with icing. 

Directions for Frosting
Blend 1 cup butter (softened) and salt on medium high until fluffy.  Reduce speed to low and add powdered sugar and blend well.  Add vanilla extract and 3 T of the strawberry purree, blend well.
