Hobo Dinner (in the oven)

Wanna feel like you are camping any time you want?  Jared and I felt like Hobo (maybe you know it as Tin Foil?) Dinners the other night, but didn't have an open fire to work with.  So we found this recipe.  Super easy, super yummy, and very little clean-up!  We loved it so much, we've already done it a second time.  :)

Ingredients

  • 1 pound ground beef (we used turkey)
  • 5 potatoes, peeled and cut into steak fries (we sliced them thin - with skins - on a mandolin)
  • 4 large carrots, peeled and sliced lengthwise (also sliced thin on a mandolin)
  • 1 onion, peeled and sliced into rings
  • salt to taste
  • ground black pepper to taste
  • garlic salt or season salt to taste
*We also added 1 lb of fresh green beans, super yummy!!!

Directions

  1. Preheat oven to 400 degrees F. Line a 9x13 inch baking pan with aluminum foil.
  2. Lightly cook meat in skillet until not quite cooked through.  Season.  Place in the bottom of the pan. Layer the vegetables on top of the beef patties, starting with the potatoes, (green beans) then carrots and finally onion rings (we also slightly sauteed the onion in the skillet). Season with salt, pepper and garlic salt to taste.
  3. Cover with aluminum foil and seal edges. Bake in preheated oven for about 1 hour, or to desired doneness.
